Shrubs will grow on you – especially if you like a fruit-forward libation!
The shrubs we’re talking about have nothing to do with your garden, though. The word shrub is derived from the Arabic word sharab, which means “to drink,” and in the beverage world, a shrub is a concentrated syrup that combines vinegar, sugar, and fruit. The result is a sweet mixer with an acidic bite that can be enjoyed on its own or added to an endless number of cocktails. And quite often, herbs and spices are also added to create interesting flavor combinations.
Shrubs are often referred to as "drinking vinegars." Apple cider vinegar, which is popular for its health benefits, is generally used as the base when making shrubs, so they are as healthy as they are delicious!
Don’t be concerned by the use of vinegar -- it provides an unusual, tangy twist that goes great with the sweetness of the fruit. It cleanses the palate and quenches the thirst, and it’s ridiculously refreshing. There are tons flavor possibilities – you can use any fruit combination you like!
Shrubs can be the star ingredient in “mocktails” and are usually topped with either cold water (as was customary in early America) or club soda, or any clear soda. For the tastiest concoction, add 1 ounce of shrub to every 5 to 6 ounces of water or soda over ice for an easy drinking beverage.
They also make a great cocktail mixer, and in 2011, shrubs began to come into favor with bartenders because they are an excellent way to add a new zing to mixed drinks. They are quite versatile and pair well with just about any liquor. Bartenders often craft their own shrubs and recipes, adding variety to their cocktail menus.
You can make your own shrubs by combining fruit, sugar and vinegar, or you can choose from many shrub products available on the market today. Shrub and Soda - Clear
In a rocks glass with ice, add:
- 1 oz white rum, blanco tequila, or gin
- .75 oz Crude Watermelon-Basil shrub or Cucumber shrub
- top with seltzer
Stir gently to incorporate.
Flying Cuke
In a rocks with ice, add:
- 1 oz Fair Game Flying Pepper vodka
- .75 oz Crude Cucumber shrub
- top with seltzer
